Cinecitta used fresh local vegetables, micro herbs, lyophilised vegetables, fresh wild tuna, Wagyu beef from Japan and Spain. It met the farmers and fishermen. it spherifed textures. It took experience and ideas from Madrid Fusion... And it created its new menu.
