Discover the world of authentic Japanese cuisine, a universe of delicate, measured tastes and combinations, of gentle perfection and attention to the tiniest details.

Recreating it outside the country of its origin is a difficult task asking for dedication and emotion, a true life's mission. Miyabi exceeds in achieving all of these. Miyabi introduces the visitor to a whole new world of tastes, textures and aromas, constantly discovering new and exciting recipes and experiences. All this becomes a reality thanks to one of Bulgaria's most renowned chefs, Petar Mihalchev. Visit Miyabi, feel yourself at home... or in faraway Japan.

Miyabi Japapene restaurantPetar Mihalchev, owner and chef of Miyabi, on the challenge and pleasure of authenticity:

What in Japanese cuisine won you over?

The fact that it is extremely difficult, precise, delicate. It is perfection.

Where did you study?

First I self-instructed myself with reading books and trying recipes and techniques. Then I went to Japan where I perfected my skills. I continue to visit the country every year, to continue learning and developing myself.

How do you achieve an authentic Japanese taste in Bulgaria?

I don't do any compromises and I don't adapt the food to the local taste.
