The fact that it is extremely difficult, precise, delicate. It is perfection.
Where did you study?
First I self-instructed myself with reading books and trying recipes and techniques. Then I went to Japan where I perfected my skills. I continue to visit the country every year, to continue learning and developing myself.
How do you achieve an authentic Japanese taste in Bulgaria?
I don't do any compromises and I don't adapt the food to the local taste.
