Everything here will redefine completely your previous knowledge on local tastes and products, and will introduce you to a variety of craft foods and wines by small local producers dedicated to quality rather than quantity. Coupage is the child of Aleksander Angelov, the founder of the groundbreaking www.bgbakalia.com, a website helping the produce of small farms, dairies and monasteries to reach the market. Coupage is the physical manifestation of Angelov's idea. Conveniently located in Sofia's centre, it is a sanctuary for everyone interested in genuine products.

Give us a reason to visit Coupage?

Coupage is a new place for Sofia, but it follows a well established concept in Europe. It is a combination between a shop and a wine-bar, offering wine, cheeses and meat delicacies by small, local producers in limited series.

How do you select your suppliers? How are you sure in the quality of their products?

Everything in Coupage is 100 percent made in Bulgaria, mainly in small wineries, farms and dairy farms. I have been working with most of the producers (suppliers) for a long time and through the years I have established with them mutual trust and respect. I know well their produce and its consistent quality.

What we do not know about Bulgarian traditional cheeses and meat delicacies?

There are huge gaps in the knowledge and some things are completely forgotten, like the Tolumeno sirene cheese, for example, which is on the verge of extinction. I can talk for hours on this, which is yet another reason for you to visit Coupage.

Recommend us a cheese, a meat delicacy and a bottle of wine for a cosy autumn evening?

I will offer you something that I have already tried and that left a lasting and very pleasant memory from a wonderful family dinner. The wine is Ilaya Mavrud Reserve 2013 by Manastira winery. The cheese is Teyze aged for 6 months. The delicacy is, of course, Elenski but, the traditional pork ham made in Elena, by Delikatesi Velev.

How is the Bulgarian market for craft foods and products developing? What are the trends and how do you see its future?

I am happy with the number of dairy shops that opened in the past few years and the several farmers' markets that are doing well, helping producers to sell their produce. Sadly, however, most of the cheeses reach the market on the verge of the minimal maturation age, which for Kashkaval is about 30-40 days. For comparison, we sell cheeses and Kashkaval that have matured for at least 3 months. I hope that in the future the trend will change and the share of the so-called gourmet products will increase.
